CANDIED CARROTS 
1 lb. carrots
3 tbsp. brown sugar
2 tbsp. butter
2 tbsp. apple juice
1/4 tsp. ground cinnamon

Peel carrots and cut into 2 inch strips. Boil until tender, about 5 minutes. Meanwhile, melt butter. Blend in brown sugar, apple juice and cinnamon. Cook until thick and bubbly. Add carrots to sauce. Cook 3 minutes longer. (If using microwave, cook sauce on high for 2 minutes, add carrots, and microwave 1 minute more.) Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
