TROPICAL AMBROSIA SALAD 
1 c. canned pineapple chunks, unsweetened and drained
1 c. mandarin orange slices, unsweetened and drained
1 c. plain lowfat yogurt
1/4 tsp. coconut extract
2 tsp. unsweetened shredded coconut
1 tsp. vanilla extract
Sweetener equal to 5 tsp. sugar

Combine all ingredients and toss to mix well. Chill to blend flavors. 4 servings. 107 calories each.
