ORANGE SLICE CAKE | |
1 c. butter 2 c. sugar 4 eggs 3 1/2 c. flour 2 tbsp. grated orange rind 1 c. buttermilk 1 tsp. baking soda 1 pkg. chopped dates 2 c. chopped pecans 1 lb. orange slice candy, chopped 2 c. chopped coconut Take 1/2 cup of 3 1/2 cups flour and mix with fruits. Set aside. Cream butter, sugar and eggs. Add other ingredients, mix well, pour in prepared pans (either tube or several small loaf pans). Spray with Pam. Bake at 250 degrees for 2 hours. While cake is baking prepare topping: 2 c. sugar 1 c. orange juice (fresh) 2 tbsp. grated orange rind Dissolve best possible. Punch holes in cake with ice pick and spoon entire amount over cake. NOTE: Be sure to wait several hours (I wait overnight) before removing cake from pan otherwise it will fall apart. |
