WALNUT BRITTLE | |
1 c. walnuts (English or black) 1 c. sugar 1/2 c. light corn syrup 1/4 tsp. salt 1 tsp. baking soda 2 tbsp. butter (1/4 stick) Grease large cookie sheet. In heavy 2 quart saucepan over medium heat, heat syrup, sugar, salt and 1/4 cup water to boiling, stir until sugar dissolves. Add walnuts. Using a candy thermometer, cook until temperature reaches 300 degrees. Drop a few drops in cold water - it should separate into brittle, hard threads. Remove saucepan from heat, stir in butter and baking soda, pour at once onto baking sheet. With 2 forks, pull mixture to spread across pan. Cool. Break into pieces and store between waxed paper in tightly covered container. 1 pound. |
