EASY FRIED RICE 
12 slices bacon
1 med. onion (or 3 bunches fresh green onions)
1 green pepper (optional)
4-6 eggs
2 c. cooked rice
Soy sauce

Fry bacon in large frying pan. Remove bacon and most of drippings. Drain bacon; set aside.

In remaining drippings fry chopped onions (using most of stems from green onions) and green pepper until transparent. Add eggs and scramble. Add rice and season with soy sauce. Heat thoroughly and serve immediately. Yields 4-5 servings.
