EASY FRIED RICE 
4 c. long grain rice
4 c. liquid
4 tbsp. soy sauce
1 tsp. salt
2 strips thickly sliced bacon, finely chopped or diced
3 eggs
1 sm. onion, diced fine
1 c. celery, diced fine
4 tbsp. salad oil
2 tbsp. green & red pepper, finely chopped
2 slices spiced ham stripped, smoke or cured ham is good too, about 1/2 c. diced

Wash rice, then add the liquid, soy sauce and salt; cook it. Bring to boil, lower flame, cover with lid steam on low heat about 20-25 minutes. Flake the cooked rice into a large bowl to cool while preparing the remaining ingredients. Saute the bacon until lightly browned; add onion, celery and pepper and saute. Add the rice and salad oil. Add ham.

Make an omelet out of the 3 eggs and chop it up. Add this now and continue cooking over a low heat, stirring to blend the ingredients well. Serve hot. Note: Pork, ham, chicken or turkey meat and shrimp work well in this dish also.
