COTTAGE CHEESE PANCAKES 
BLEND IN BLENDER:

1 c. 2% cottage cheese
1 tbsp. vegetable oil
3 or 4 eggs

ADD:

1/2 c. brown rice baking mix, levening included
Wheat germ (optional)
Nuts (optional)
Berries (optional)

May substitute with 1/2 cup triticale flour OR 1/2 cup whole wheat flour and 2 teaspoons of baking powder. Makes 2 cups pancake batter.
