STRAWBERRY BREAD 
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
2 (10 oz.) pkgs. frozen strawberries, thawed and drained, with juice reserved
1 1/4 c. cooking oil
4 eggs, well-beaten
1 (8 oz.) pkg. cream cheese
1/2 c. reserved strawberry juice

In a large bowl combine flour, baking soda, cinnamon, sugar and salt. Make a hole in center of dry ingredients and pour in strawberries, oil, and eggs. Mix by hand until all ingredients are thoroughly combined and pour batter into 2 greased and floured 9x5x2 1/2 inch loaf pans. Bake at 350 degrees for 1 hour. Cool.

Combine cream cheese and strawberry juice in blender and blend until mixture is of spreading consistency. Spread on cooled bread slices. NOTE: Blueberries, bananas, zucchini and other fruits may also be substituted.
