CONFETTI RICE MOLD 
1 onion, quartered
2 c. raw carrot pieces
1 sliced green pepper
1 (4 oz.) jar pimentos
1 c. vegetable broth
1/2 tsp. salt

Place all ingredients in blender. Cover and turn motor on and off several times until vegetables are coarsely chopped. Pour into saucepan. 1/4 c. olive oil

Add rice and oil to vegetables and cook until liquid is absorbed and rice is tender. If necessary, add more water. Pack into 1 1/2 quart mold until shaped. Unmold and serve.
