BAKED GERMAN POTATO SALAD 
2 1/2 c. diced, cooked potatoes
1/3 c. diced celery
2 tbsp. drained sweet pickle relish
2 tbsp. green pepper
Grated cheese

DRESSING:

3 tbsp. butter
1/4 c. chopped onion
1 tbsp. flour
1/4 tsp. dry mustard
1 1/2 tbsp. sugar
1 1/2 tsp. salt
1/4 tsp. onion seasoning
1/4 tsp. celery salt
Dash of pepper
3 tbsp. vinegar
3 tbsp. water

Melt butter in a heavy pan. Add onion and cook slowly until golden brown. Mix flour, sugar, mustard, onion seasoning, celery salt, pepper, and salt together. Add vinegar and water. Add to onion and cook until thick. Add potatoes, celery, sweet pickle relish and green peppers. Toss lightly until potatoes are covered with dressing. Pour into a casserole, cover with grated cheese. Cover dish and bake at 350 degrees for 20-30 minutes. Leave stand in warm place 30 minutes. Serves 4.
