TANYA'S MANGO SALSA 
Perfect for a summer cookout!

2 ripe mangoes
1 red bell pepper
1 small red onion
1 (15 oz.) can whole black beans
5 sprigs fresh cilantro
1 lime
1/4 tsp. salt

Drain and rinse black beans. Dice pepper and onion into small pieces. Remove skin, cut mango into small cube shaped pieces. Remove cilantro leaves from stems and finely chop. Add all ingredients into container/bowl. Halve lime and squeeze juice of the 2 halves over top of ingredients. Sprinkle with salt. Mix, so lime juice and salt are evenly distributed. Let stand, or refrigerate for at least an hour for flavors to marinate.

Serve with corn tortilla chips (I use the blue corn ones!)

Makes about 4 cups.

Note: This is mildly spicy. To give it a spicier kick, add 1 diced jalapeno, seeds removed!! (For extra spicy, include seeds!)

Would also be great cool topping on warm salmon, tilapia, mahi-mahi or any mild flavored baked fish.
