CHEESE FONDUE 
8 oz. Swiss cheese, grated
1 1/2 tbsp. flour
1 clove garlic to rub pan
3/4 c. wine (Vermouth or Sauterne)
1/2 tsp. Tabasco
1/8 tsp. nutmeg

In a fondue pot, mix flour and cheese together, gently. Add wine, and heat to a low simmer. Add the balance of ingredients, gradually blending. If it is too thick, add a little more wine.

To serve 6 people, use 2 pounds cheese and increase other ingredients in quantity, 4 times.
