PUMPKIN/CHEESE ROLL 
CAKE:

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking powder
1 tsp. ginger
1/2 tsp. salt

CHEESE FILLING:

1 c. powdered sugar
1 (8 oz.) cream cheese
4 tbsp. butter
1/2 tsp. vanilla

Mix cake ingredients and pour into well greased 15 1/2" x 10 1/2" x 1" jelly roll pan. Bake at 375 degrees for 15 minutes. Turn on towel sprinkled with powdered sugar immediately. Roll jelly roll fashion and cool. Mix filling. Unroll cake, spread filling on cake and re-roll. Chill overnight. Wrap in foil.
