CHICKEN CACCIATORE | |
6 chicken breast halves with ribs All-purpose flour 1 tsp. salt 1/4 tsp. pepper 3-4 tbsp. oil 1 med. onion, chopped 2 garlic cloves, minced 1 tsp. Italian seasoning 1 (15 oz.) can tomato sauce 1 (6 oz.) can tomato paste Sprinkle chicken with salt and pepper. Dredge in flour, shaking off excess. Heat oil in Dutch oven over medium heat. Brown chicken 4 to 5 minutes on each side. Remove chicken and drain on paper towels. Place chicken in large baking dish. Saute onions and garlic in drippings. Add tomato sauce and tomato paste. Stir in seasoning. Simmer 5 minutes. Pour over chicken. Bake, covered, at 350 degrees for 50-55 minutes or until chicken is tender. Serve over hot cooked spaghetti. Yield: 6 servings. |
