MARINATED MUSHROOMS 
1 lb. fresh mushrooms
3/4 c. dry white wine
1/2 c. olive oil (or salad oil)
2 tbsp. lemon juice
1 1/3 tsp. salt
1/2 tsp. hot red pepper
2 tbsp. onion, chopped

Slice mushroom stems and caps (leave small caps whole). Combine all other ingredients, simmer for 15 minutes. Pour over mushrooms, cover and chill.
