PICKLED MUSHROOMS 
1 1/2 lbs. fresh mushrooms
3/4 c. olive oil
1/2 c. wine vinegar
3/4 tsp. sugar
1 1/2 tsp. salt
1/2 tsp. basil
6 peppercorns
1 bay leaf
1 clove garlic, quartered

Heat all ingredients except mushrooms to boiling over medium heat. Cover, simmer mixture over low heat for 10 minutes. Stir in mushrooms until coated with mixture. Cook 3 to 5 minutes over medium heat. Cool. Refrigerate, covered. Prepare at least 24 hours before serving.
