PICKLED MUSHROOM SALAD 
8 oz. canned mushrooms, undrained (whole)
1/4 c. celery leaves, chopped
1 onion, sliced thin
1/3 c. cider vinegar
1 bay leaf
1/2 tsp. salt
1/4 tsp. celery seed
1 tsp. low calorie Italian dressing

Combine all ingredients, cover, chill overnight. Serve on lettuce leaf if desired. Can also use grated carrots, chopped peppers, sliced or mushroom pieces. 21 calories. 4 servings.
