QUICK N' DELICIOUS CHICKEN DISH | |
8 boneless chicken breasts 2 cans white potatoes, sliced 1 lb. bacon 2 tbsp. butter 1 tbsp. vegetable oil Lawry's seasoning salt Fry bacon a little bit to get most of grease off. (Note: If bacon starts to burn, just place it in a bowl and set it aside and continue cooking potatoes until lightly browned.) Lightly salt potatoes with Lawry's seasoning salt. Place drained potatoes in 9 x 13 inch pan, place partially fried bacon over top and place in broiler until bacon is done, cooking and mixing up occasionally. Put oil and butter in skillet, place chicken (Lawry salted) in oil and stir fry about 10 minutes, until browned and cooked through, turning once. Place chicken on platter and top with potatoes and bacon. Delicious! |
