POTATO SOUP 
10 lbs. potatoes, peel and cut up to sm. bite size portions
6-8 lg. onions, cut off both ends, then cut in half (end to end), then thinly slice onion end to end

Place onions and potatoes in pot covered with water and boil until potatoes are done. Add alot of salt (it takes alot, 3-4 tablespoons) and pepper (shake pepper until top of water is covered).

When potatoes are done, pour off water to top of potatoes and onions. Keep heat on high, and add the following: 2 cans cream of chicken soup 12 oz. pkg. Mozzarella cheese

After mixture is blended and cheese is melted, turn soup down on low. Serve in bowl sprinkled with bacon bits and grated Cheddar cheese. Serves approximately 12 people. Cut recipe in half for 6 people.
