ZUCCHINI BREAD 
3 beaten eggs
1 c. cooking oil
2 c. sugar
1 tsp. baking soda
1/2 tsp. baking powder
2 c. grated raw zucchini
2 tsp. vanilla
3 c. flour
1 tsp. cinnamon
Option: 1/2 c. chopped nuts

Grease and flour 2 loaf pans or large microwave tube pan. Beat eggs; add oil, sugar, zucchini and vanilla. Cream together. Add the dry ingredients and blend in thoroughly. Microwave about 20 minutes on a turntable. Bake in oven about 1 hour at 325 to 350 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
