ZUCCHINI CASSEROLE | |
2 lb. zucchini 1/2 chopped onion 3 eggs 1 tsp. hot sauce (Tabasco) 1 tsp. garlic powder 2 tbsp. grated Parmesan cheese 2 tbsp. parsley flakes 1 tsp. oregano 1/4 tsp. salt Pepper 1/2 c. butter, melted 2 c. Ritz crackers Slice zucchini in 1/4 inch pieces, boil 3 minutes. Drain. Add onions, eggs and all seasonings; mix well. Pour into well buttered 2 quart casserole. Mix butter and crushed crackers together and sprinkle over zucchini. Bake at 350 degrees for about 40 minutes or until brown. |
