APPLE PANCAKE ROLL-UPS 
PANCAKES:

1/3 c. oat flour
1/2 c. egg whites
1 tsp. vanilla extract, or vanilla and butternut flavoring
2 tsp. baking powder
1/4 c. natural applesauce

FILLING:

1 c. canned non-sugar apple slices
6-7 packets of aspartame sweetener
1 tsp. cinnamon
2/3 c. nonfat cottage cheese

Mix pancake ingredients and cook in nonstick skillet sprayed with cooking spray. Microwave apple slices for 5 minutes on High. Remove and add five packets of aspartame and cinnamon. Stir remaining aspartame into cottage cheese (optional) and add a little vanilla extract if desired.

To assemble spoon apple slices onto pancake and top with a spoonful of cottage cheese. Roll to make a blitz. 435 calories, 1.5 grams fat.

Since microwave ovens vary in power, you may need to adjust your cooking time.
