POTATO, ONION AND CHEESE OMELET 
Heat frying pan. When pan is hot, melt butter. Slice (1 medium peeled potato and one small onion, salt and pepper to taste). Cook until ALMOST done. In a bowl beat 2 eggs, 2 tablespoons milk and 2/3 cup shredded Cheddar cheese.

Pour over potatoes and onions - turn over once - and cook as much as needed to melt the cheese. Our family loves this (P.W.).
