POTATO, ONION AND CHEESE OMELET | |
Heat frying pan. When pan is hot, melt butter. Slice (1 medium peeled potato and one small onion, salt and pepper to taste). Cook until ALMOST done. In a bowl beat 2 eggs, 2 tablespoons milk and 2/3 cup shredded Cheddar cheese. Pour over potatoes and onions - turn over once - and cook as much as needed to melt the cheese. Our family loves this (P.W.). |
