POTATO STEW | |
2 lbs. potatoes 1 lb. beef, cubed 2 tbsp. butter 1 lg. onion, chopped 1 1/2 lbs. fresh tomatoes, chopped 1 tsp. salt 1/4 tsp. black pepper Pinch of hot red pepper Peel the potatoes and cut into 3/4 inch cubes. Drop into a pan of salted water and set aside. In a large pan, brown the meat in the butter. Add the onion and saute until the onion is translucent. Stir in the tomatoes and salt. Cook over low heat, covered about 30-40 minutes or until the meat is tender. Drain the potatoes and add to the meat. Cook another 20 minutes until potatoes are tender. Add a little more water if necessary. Transfer to a serving bowl. Sprinkle black and red pepper and serve with pilaf. |
