MEATBALL VEGETABLE MAIN - DISH
SOUP
 
1 lb. ground beef
1 egg, slightly beaten
1/2 c. sm. bread cubes
3/4 c. onion, finely chopped
1/2 tsp. shortening
1/2 tsp. salt
1 can beef broth
1 can tomato soup
1 can sm. white potatoes, drained & cut
1 (8 oz.) can peas, undrained
1/8 tsp. thyme leaves, crushed

Mix thoroughly beef, egg, bread cubes, 1/4 cup onion, and salt; shape into 36 meatballs. In large saucepan, brown meatballs and cook remaining 1/2 cup onion in shortening until tender; pour off fat. Add remaining ingredients. Heat; stir occasionally.

Makes about 6 cups.
