POORI - AN INDIAN BREAD 
2 c. whole wheat flour
2 tsp. baking powder
1 tsp. salt
2 tbsp. salad oil plus oil for cooking (oil of your choice)
1 c. cold water

In a bowl thoroughly combine flour, baking powder, salt, 2 tablespoons salad oil, and water. Roll dough into 1 1/2 to 2 inch balls. On a floured board, roll each ball into 1/8 inch thick circles.

Heat oil in skillet (depth about 1 1/2 inch); temperature of oil should be about 380 degrees (f). Drop in a bread circle, hold it under the oil with a wooden spoon; hold it until it is bubbly and puffy. Cook until light brown, flipping once. Drain on a paper towel. Repeat with the rest of the circles. Serve hot. Makes about 15.

NOTE: If desired, bread may be made up early on the day before and kept fresh wrapped in foil. Reheat in foil in a hot oven (about 400 degrees F before serving).
