RHUBARB COBBLER 
4 c. diced rhubarb
1 c. sugar
3 tbsp. butter
1 1/2 c. flour
1/4 tsp. salt
3 tsp. baking powder
3/4 c. sugar
1/4 c. shortening
1 slightly beaten egg
1/2 c. milk

Put rhubarb in greased 8 x 12 inch baking dish. Sprinkle with 1 cup sugar and dot with 3 tablespoons butter. Heat in moderate oven (350 degrees) while mixing batter. Sift together flour, salt, baking powder and sugar. Cut in shortening until mixture resembles coarse crumbs. Mix egg and milk together with fork and then add to flour mixture. Pour batter over hot rhubarb. Bake at 350 degrees for 30-35 minutes, until top is golden.

NOTE: You may substitute other fruit, such as peaches or berries, but adjust amount of sugar you put on fruit, you won't need as much as for rhubarb.
