MEXICAN SALAD | |
1 lg. or 2 med. heads lettuce, chopped up 3/4 lb. grated cheddar cheese 3/4 lb. grated Jack cheese 1 lb. ground beef (cooked, chopped up, drain well) 1 lg. can black olives (chopped up) 4-5 green onions, cut up 1 med. white onion (chopped up) 2 med. cans red kidney beans, drain well 3-4 tomatoes (cut up) 2-3 avocados, cut up (add at last minute if possible) 3 or 4 handfuls tortilla chips (just smash and mix in) Mix together and serve. Catalina dressing served on the side -- very good. Serves 25. |
