ROAST DUCK | |
5 lb. duck 1 garlic clove 1/2 c. raisins 4 apples, cut in sm. pieces 1 c. orange juice Wash, clean and singe duck. Season, rub with garlic and fill with apples and raisins. Place in a roasting pan and roast uncovered in a slow oven at 325 degrees. Allow 20 to 30 minutes per pound. Baste every 10 minutes using orange juice. Serve with currant jelly and whole baked apples, if desired. Serves 6. |
