LAZY DAISY OATMEAL CAKE 
1 C oatmeal
1-1/4 C boiling water
1/2 C butter
1 C firmly packed brown sugar
1 C granulated sugar
1 tsp vanilla
2 eggs
1-1/2 C flour
1 tsp. baking soda
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg

Pour boiling water over the oatmeal and let stand 20 minutes. Cream butter until fluffy. Add brown sugar and granulated sugars and beat until fluffy. Blend in vanilla, eggs and oatmeal mixture.

Sift together the flour, soda, salt, cinnamon and nutmeg and add to mixture. Blend well.

Pour batter into a well greased and floured 9x9 inch baking pan.

Bake in preheated 350°FF oven for 50-55 minutes. When done, frost immediately with Lazy Daisy Frosting.
