BUTTERSCOTCH OATMEAL COOKIES 
2 c. flour
1 c. shortening
3/4 c. white sugar
3/4 c. brown sugar
2 eggs
1 tbsp. hot water
1/2 c. chopped nuts (optional)
1 pkg. butterscotch chips
1 tsp. vanilla
1 tsp. baking soda
1 c. oatmeal

Cream shortening and sugars together. Beat eggs and add to shortening. Dissolve soda in water and add and mix well. Add vanilla and flour. Then add oatmeal. Stir in nuts and butterscotch chips by spoon so not to break chips up.
