BUTTERSCOTCH OATMEAL COOKIES 
2 c. shortening
1 1/2 c. brown sugar
1 1/2 c. white sugar
4 beaten eggs
2 tsp. hot water
3 1/2 c. flour
1 tsp. baking soda (baking)
2 tsp. vanilla
4 c. oatmeal
1 1/2 c. coconut
1 (12 oz.) bag butterscotch chips

Heat oven to 375 degrees. Cream together shortening and sugar. Add eggs, water, flour, soda and vanilla. Stir in oatmeal, coconut and butterscotch chips. Drop by teaspoonfuls on cookie sheets. Cook until light brown.
