BUTTERSCOTCH OATMEAL COOKIES 
1 c. shortening
3/4 c. brown sugar
3/4 c. white sugar
2 eggs
1 tsp. baking soda dissolved in 1 tsp. warm water
1 1/2 c. flour
1 tsp. salt
2 pkg. butterscotch bits
1 tsp. vanilla
2 c. quick oats

Drop by spoonful on cookie sheet and bake at 375 degrees for 10-12 minutes. Do not over bake.
