OLD FASHIONED POTATO SALAD | |
6 Idaho potatoes (3 large and 3 small or medium size) 1/4 c. Vidalia onion 1/2 c. celery 3 boiled eggs DRESSING: 3 or 4 tbsp. Hellmann's mayonnaise (lite) 1/2 tsp. mustard 1 wedge lemon, squeezed 1 to 2 tsp. Italian seasoning from McCormick bottle Mix well before adding to potato mixture. Peel, slice and cook potatoes until soft with a little butter and salt as preferred. Drain potatoes in colander. Place potatoes, drained, back into stewer cooked in, and mash. Then add chopped onion, celery, and boiled eggs into mashed potatoes. Mix well. Then add dressing to potato mixture and mix well. Place in bowl. Garnish as you prefer-parsley, sliced bell pepper. Makes nice size bowl of potato salad. |
