UNBELIEVABLE SALAD 
1 can (15 1/2 oz.) crushed pineapple
1 pkg. (3 oz.) cherry gelatin
1 can (11 oz.) mandarin oranges, drained
1 (8 oz.) creamed cottage cheese
1 pkg. (4 1/2oz.) frozen whipped topping, thawed

Pour the pineapple with its juice into a glass measure. Microwave on high for 2 to 2 1/2 minutes, until boiling. Remove carefully. Add the gelatin. Stir with a wooden spoon until dissolved. Chill in the refrigerator until it is cool and begins to thicken, about 2 hours.

Remove from refrigerator and stir in the oranges, cottage cheese, and whipped topping. Pour into square dish. Refrigerate until firm. Cut into squares and serve on lettuce leaves.

Since microwave ovens vary in power, you may need to adjust your cooking time.
