PUFFY PANCAKES 
3 eggs
1/3 c. low fat milk
1/4 c. low fat cottage cheese
1/4 c. all purpose flour
1 tsp. sugar
1 tsp. vanilla
1/4 tsp. cinnamon
1 tbsp. butter
Confectioners' sugar
Maple sugar or sweet preserves

In a warm oven, melt butter in a 10 x 6 x 2 inch baking pan or deep 9 inch pie plate. Spread butter to coat dish. Set aside. Preheat oven to 425 degrees. Place eggs, milk, cottage cheese, sugar, vanilla and cinnamon in blender. Cover blender and at high speed, beat until smooth. Pout into hot buttered pan. Bake until puffy and golden brown about 20 minutes. Serve immediately. Sprinkle with sugar, maple syrup or preserves.
