MEXICALLI BAKED CHICKEN 
2 1/2 lb. skinless chicken pieces
Salt, pepper & paprika to taste
1/2 c. tomato juice
1/2 c. citrus carbonated beverage (like 7-Up or Sprite)
2 tsp. chili powder
1/2 green pepper, minced fine
1 tsp. soy sauce
1/4 tsp. garlic powder
1/4 tsp. legal hot sauce (optional)

Season chicken pieces with salt, pepper and paprika and place in a shallow baking dish. Combine remaining ingredients and pour over chicken. Bake covered for 30 minutes at 375 degrees. Remove foil and continue cooking uncovered for another 10-15 minutes. Serves 4.
