BEET BARSZCZ 
1 lb. pork end or country spare ribs
1 can beets or fresh cooked beets
1 c. sour cream

Cook meat until tender, add the beets and cook 5 minutes. Thicken with a mixture of flour and water; cook 2 minutes. Remove from heat. Whip sour cream in bowl and gradually add some barszcz, then add to pot. Serve with cooked mashed potatoes that have been flavored with a small chopped onion fried in butter. Paper generously.
