ORIGINAL "DEE-LICIOUS" LO-CHOLESTEROL MUFFINS | |
3 c. flour 3 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/4 tsp. nutmeg 1/4 tsp. cinnamon 2 eggs 1/2 c. oil 1/2 c. light brown sugar 1/4 c. molasses or honey 1 c. lo-fat milk or apple juice or orange juice or any combination 1/2 c. plain yogurt 1 grated carrot 1 grated apple, peeled 1/2 c. drained crushed pineapple (in juice not syrup) 1/2 c. raisins (1 1/2 cups whole wheat, 1/2 cup rye flour, 1/2 cup oatmeal, 1/4 cup cornmeal, 1/4 cup Bran). Oven temperature: 40 degrees -for about 25 minutes. Sift flour with baking powder, baking soda and salt. Then stir in rest of dry ingredients. Mix well. Put eggs, oil, sugar, molasses (or honey) and liquids into blender and blend. Then pour it over the apple and carrot (which were grated), raisins and pineapple and stir well. Then pour into dry ingredients and mix only until blended. Do not over stir or beat or the finished muffin will have many tunnels or holes. Pour into muffin tins that have been sprayed with an all-natural baking spray. Sprinkle with sesame seeds or poppy seeds or grated nuts. Bake about 25 minutes until golden brown. Gently take out of pan and cool on cookie rack. Makes approximately 2 dozen muffins. |
