STUFFED ROLLED MEATLOAF 
1 lb. ground ham
1 egg
1/2 c. milk
1/4 tsp. pepper
1 (16 oz.) can apricot halves, drained, juice reserved
1/2 lb. ground pork
1/2 tsp. salt
1 c. chopped onion
1/4 c. crushed saltines
1/2 tsp. thyme
1/2 c. chopped parsley

In large mixing bowl, blend ham, pork, crackers, egg, milk, salt, thyme, and pepper. Mix until well blended. Moisten a piece of wax paper 18" long. Pat meat mixture to make a rectangle 9"x12". Spread onions over top of meat. Coarsely chop apricots, sprinkle over onions. Sprinkle with parsley Roll, starting with 9" side, jelly roll style. Place in greased bread pan. Bake at 350 degrees for 50 minutes. Boil juice from apricots to measure 1/4 cup. Brush meatloaf half way through baking with juice.
