WALNUT CHEESECAKE 
1 orange rind (peeled; use only the zest)

Boil the peel in water, change water several times. Cook until rind is tender and breaks apart.

CRUST:

16 graham crackers (2 c. crumbled)
2/3 c. sugar
1/2 c. butter
1/4 c. black walnuts, chopped

Mix well and spread on bottom and sides of a springform pan.

FILLING:

1 lb. cream cheese
1/3 c. sugar
2 eggs
1 cooked orange peel, drained
1 1/2 tsp. orange juice
1/2 tsp. orange flavoring

Cream together cream cheese and sugar. Next add eggs one at a time. Then add orange peel, orange juice and flavoring. Pour mixture into crust and bake 30 minutes at 325 degrees. After cooling, spread 1 small carton of sour cream over the top, then top with fruit if desired.
