CALVIN'S VEGETABLE SOUP 
8 med. carrots, sliced
2 c. chopped celery
5 med. potatoes, peeled and cut in sm. cubes
3 fresh tomatoes, cut up or 1 sm. can stewed tomatoes
1/2 white onion, chopped
1/2 head cabbage, chopped
1 lg. can mushrooms, drained or 1 c. fresh mushrooms, chopped
1 tbsp. beef bouillon
1 dash Kitchen Bouquet
1 dash ground ginger
1 1/2 lbs. ground beef, rolled into sm. balls (meat is optional)

Place all ingredients except mushrooms and meat in a large pot. Add water until it covers the ingredients by at least 2 inches. Bring to boil, turn down and let simmer about 1 - 1 1/2 hours or until vegetables are tender. Add mushrooms and meatballs. Simmer another 45 minutes.
