LEMON BREAD WITH GLAZE 
1 1/2 c. flour
1 tsp. baking powder
Pinch salt
1 c. sugar
6 tbsp. butter
2 eggs
1 tsp. lemon rind, grated
1 tsp. lemon extract
1/2 c. milk

Sift together the flour, baking powder and salt; set aside. In large bowl, mix sugar, butter and egg until fluffy. Add grated lemon rind and lemon extract. Add flour mixture alternately with the 1/2 cup milk. Mix well and pour into greased loaf pan. Bake approximately 45 minutes at 350 degrees. When done, remove from oven and pour glaze over bread.

GLAZE:

Juice of 1 lemon
1/2 c. sugar

Let set in pan approximately 20 minutes to let glaze harden before removing from pan. A nice change!
