SPINACH STUFFED TOMATOES 
Cut off top fourth of 8 medium to large tomatoes. Scoop out pulp (carefully) to make hollow shells. Chop up pulp. Set aside. Heat:

Saute 1 large onion, chopped and add: 1 box frozen chopped spinach, thawed

Cook 3 minutes. Add 1 cup Minute Rice. Remove from heat, place lid, set 20 minutes. Add: 1/4 tsp. nutmeg

Fill tomatoes with spinach mixture. Place ungreased baking pan. Broil 4 inches below heat about 3 minutes. Serve warm.
