SCALLOPED CHICKEN 
1 chicken, cooked and diced
4 c. bread cubes
1/2 c. fat
1 tsp. parsley
1/2 c. chicken fat and butter
6 c. chicken broth
3/4 c. flour

Melt chicken fat and butter in pan. Add bread cubes, chopped giblets and seasoning to make a bread filling. Make a gravy by blending flour to melted fat and adding broth. Add chopped chicken and parsley to gravy. Put a layer of the bread filling in bottom of a casserole. Add chicken and gravy, then a layer of filling on top. Bake at 350 degrees for 35 to 40 minutes. Serves 6 to 8.
