NEW POTATOES BAKED WITH BAY
LEAVES AND LEMON (Pass)
 
2 lb. red new potatoes, cut into chunks
1/4 c. plus 2 tbsp. fresh lemon juice
1 1/2 tsp. dried oregano, crumbled
1 tsp. grated lemon peel
1 tsp. salt
1/4 tsp. ground pepper
1/2 c. olive oil
20 sm. bay leaves

Preheat oven to 375 degree oven. Lightly oil large shallow baking dish. Add potatoes to dish. Mix lemon juice, oregano, lemon peel, salt and pepper in bowl. Whisk in oil. Pour over potatoes; toss well. Tuck bay leaves around potatoes. Bake until potatoes are golden brown, turn potatoes every 10 minutes, about 1 hour. Discard bay leaves. Adjust seasoning with salt and pepper.
