CRABMEAT CHICKEN 
2 whole chicken breasts, skinned, boned & halved
1/2 c. flavored bread crumbs
4 mushrooms
4 oz. crabmeat
4 slices Monterey Jack cheese
Piece of fresh dill or 1/2 tsp. dried dill
2 tsp. butter
2 tsp. olive oil

Press bread crumbs into chicken on both sides. Oil an oven proof casserole large enough to hold all the chicken pieces. Mix together the crabmeat and dill in a small bowl.

Place the chicken in the oiled casserole and put some of the crab mixture on each piece. Then put a mushroom cap and dot of butter on each piece - top with a slice of Monterey Jack cheese and bake in a 425 degree oven for 20 minutes. Serves 4.
