SWEET POTATO PUFF 
6 lg. sweet potatoes, boiled
3 tbsp. butter
1/3 to 1/2 c. Cointreau (a liquor)
Salt and pepper to taste
Dash of nutmeg
2 egg whites, beaten

Mash cooked potatoes. Add butter, Cointreau, salt, pepper, and nutmeg. Beat. Fold in egg whites. Bake at 375 degrees until puffy and lightly browned, about 25 to 30 minutes. You may substitute squash (any type - orange or yellow meat) for sweet potatoes. Start with less Cointreau and taste, adding as necessary.
