CHICKEN STIR-FRY 
3/4 to 1 lb. chicken breasts, boned, sinned and cut into strips
1/2 lb. fresh mushrooms, sliced
2-3 green onions, with green tops, sliced
Pea pods, if desired
1 lime, halved and seeds removed
2-3 tbsp. soy sauce
1/2 tbsp. sesame seeds

Spray skillet lightly with Pam; heat. Add chicken; cook until golden. Add mushroom and green onions; cook until lightly browned. Stir in pea pods; quickly squeeze lime juice over all. Add soy sauce; stir and let liquid reduce. Remove from heat. Add sesame seeds and toss. Great over Fried Rice.
