PINEAPPLE PECAN LOAF BREAD 
1/4 c. shortening
3/4 c. firmly packed brown sugar
1 egg
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/3 c. frozen orange juice concentrate (thawed and undiluted)
1 (8 oz.) can undrained crushed pineapple
1/2 c. chopped pecans

Cream shortening - add sugar; beat well. Add egg, beat well. Combine soda, flour and salt. Add to creamed mixture with orange juice. Begin and end with flour mixture. Stir in pineapple and pecans. Bake in greased and floured loaf pan. 350 degrees about 50 minutes.
